Banana Bread

  • 2 c. all purpose flour
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1/2 c. butter, softened to room temp.
  • 3/4 c. dark brown sugar
  • 2 eggs
  • 1/3 c. plain Greek yogurt
  • 1 tsp. pure vanilla
  • 4 ripe bananas, mashed
  • 3/4 c. chopped pecans (optional)

Preheat oven to 350 degrees. In large bowl mix together flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar until smooth. Add eggs one at a time. Beat in yogurt, vanilla and bananas.

Slowly fold into dry ingredients until all ingredients are combined. Fold in nuts (optional). Spread mixture into greased loaf pan.

Bake for about 45-50 minutes. Last twenty minutes gently lay foil over top so ends don’t get too brown.
