Chocolate Banana Mini Bundt Cakes

  • 1 c. all-purpose flour
  • 1/2 c. cocoa powder (we used Ghirardelli)
  • 2 tsp. baking powder
  • 1/4 c. salted butter (room temp)
  • 3 ripe bananas
  • 1 large egg
  • 1/4 c. canola oil
  • 1 tsp. pure vanilla
  • 1 c. light brown sugar
  • 1-1/2 c. semi-sweet chocolate chips
  • 1 c. chopped pecans

Preheat oven to 350. Grease loaf pan or mini Bundt cake pan and set aside. In medium mixing bowl combine flour, cocoa and baking soda. Set aside. In separate bowl mash bananas with a fork until mashed well. Add butter, oil, vanilla and egg. Whisk in brown sugar. Fold in dry ingredients. Stir in chocolate chips and pecans. Bake 45-50 minutes if baking bread and about 22-25 minutes if making Bundt cakes. Cool for about 10-15 minutes, invert pan onto baking rack. Sprinkle w/powdered sugar. (Makes 6 cakes)
