Decadent cheese potatoes

Serves: N/A


  • 2 1/2 pounds red potatoes, washed and sliced thin (do not peel)
  • 2 1/2 c. heavy cream
  • 1, 5.2 oz pkg. Boursin Cheese- We used Basil & Chive (can be found in the specialty cheese section)
  • Real Bacon Bits (small package)
  • Fresh chives chopped
  • Salt and pepper to taste


  1. Preheat oven to 325 degrees.
  2. Take 1/2 of the sliced potatoes and spread in pan (we used a cast iron skillet).
  3. On very low heat, heat the cream and crumble the cheese into small pieces slowly stirring together until cheese melts.
  4. Pour half of the mixture over the potatoes.
  5. Take the remaining potatoes and make another layer.
  6. Pour the rest of the sauce mixture over the potatoes.
  7. Bake at 325 for one hour.
  8. Before serving sprinkle generously with bacon bits and (a lesser amount) of chives.
