Herb Crusted Pork Tenderloin

  • 1- 4 lb. boneless pork tenderloin
  • 1 tsp. salt
  • 1 tsp. rosemary
  • 1 tsp. basil
  • 1 tsp. thyme
  • 2 tbsp. olive oil
  • 4 cloves of garlic, minced

Preheat oven to 475. Place the pork loin on a rack in a roasting pan. Combine ingredients in a small mixing bowl. Massage the mixture onto the pork loin covering the whole loin. Roast for 30 minutes and then turn down to 425 roasting for an additional hour or until it reaches an internal temp of 155. Let rest about 20 minutes before carving.
