Hi, what are you looking for?

Records

“Hoppin John”

Ingredients:
  • 1/4 lb. thick sliced bacon, cut into small pieces
  • 4 andouille sausage links, halved and sliced thin
  • 1 small yellow onion, chopped
  • 2 celery stalks, chopped
  • 1 bell pepper (any color) chopped
  • 2 Tbsp. minced garlic
  • 2-12 oz. pkgs. Frozen black-eyed peas
  • 32 oz. container of chicken stock
  • 1 Tbsp. Thyme
  • 1 heaping Tbsp. Cajun seasoning (or more to taste)
  • 12 oz. bag, long grain rice (rinsed and cooked according to package directions)
Directions:

Brown bacon and sausage over low heat. Cook a few minutes over low heat for about 3-4 minutes. Push meat to the sides, add onion, celery, pepper and garlic and cook another 5-6 minutes or vegetables are soft and onion is a golden brown. Add blackeyed peas, chicken stock, seasonings and salt and pepper. Simmer on low approx. 30 minutes. We like to serve the rice on the bottom and add the Hoppin John on top. For more heat sprinkle with Cajun seasoning or Tabasco sauce.
