Thumbprint Cookies with Jam

  • 1 c. unsalted butter, softened to room temp
  • 1/2 c. sugar, plus a few tablespoons before baking
  • 2 large egg yolks
  • 1-1/2 tsp. pure vanilla
  • 2 c. all purpose flour
  • 1/4 tsp. salt
  • 1/2 c. jam, any flavor

Preheat oven to 350 degrees. Line a baking sheet with parchment paper. Cream butter and sugar together until fluffy. Add egg yolks one at a time, mixing after each addition. Fold in vanilla. Combine flour and salt in separate bowl and add to the butter and sugar mixture until well combined. Gently roll dough into a ball roll in the extra sugar and set on baking sheet. Use your thumb to press down the centers as shown in the photo. Fill the centers with jam. Bake 12-14 minutes or until edges are slightly brown. Makes approx. 18 cookies.
