Tortellini Salad

  • 16 oz. fresh (not dry) five cheese tortellini
  • 2 Tbsp. dried Italian Seasoning
  • 6 oz. salami or pepperoni nuggets or pieces
  • 3 Tbsp. Parmesan cheese
  • 6 oz. Kalamata or black olives
  • Small jar marinated artichoke hearts, diced
  • 6 oz. mozzarella balls or pepper jack cheese cubed
  • 1 c. whole grape tomatoes or sun dried tomatoes
  • Fresh basil
  • 1/3 c. olive oil
  • 3 Tbsp. Balsamic vinegar
  • 3 Tbsp. white wine vinegar
  • 2 Tbsp. dried Italian Seasoning
  • 1 tsp. salt
  • 1/2 tsp. pepper

Cook tortellini according to package directions. Drain, add remaining ingredients. Toss w/dressing and chill before serving. If you don’t have the ingredients to make the dressing homemade, you can substitute a 1/2 c. of Italian Dressing. (Serves 4-6)
