Directions:
- 16 oz. fresh (not dry) five cheese tortellini
- 2 Tbsp. dried Italian Seasoning
- 6 oz. salami or pepperoni nuggets or pieces
- 3 Tbsp. Parmesan cheese
- 6 oz. Kalamata or black olives
- Small jar marinated artichoke hearts, diced
- 6 oz. mozzarella balls or pepper jack cheese cubed
- 1 c. whole grape tomatoes or sun dried tomatoes
- Fresh basil
Dressing:
- 1/3 c. olive oil
- 3 Tbsp. Balsamic vinegar
- 3 Tbsp. white wine vinegar
- 2 Tbsp. dried Italian Seasoning
- 1 tsp. salt
- 1/2 tsp. pepper
Directions:
Cook tortellini according to package directions. Drain, add remaining ingredients. Toss w/dressing and chill before serving. If you don’t have the ingredients to make the dressing homemade, you can substitute a 1/2 c. of Italian Dressing. (Serves 4-6)
